We have contracted directly with cacao farm and chocolate factory, in order to manage the whole chocolate making process.
Also we do not produce a massive ammount of chocolate to not mix with other cacao beans but use only one cacao which is fermented and dried in one farm.
This is the reason that you can fully enjoy a taste and aroma of one special cacao bean.

카카오는 재배하기 매우 어려운 열매입니다. 적도 근처 열대지방에서 자라는 카카오나무는 1년에 150㎝ 정도의 많은 비와 높은 습도가 필요합니다. 열대지방이라고 해도 최저 기온이 16℃ 이하로 내려가는 곳에서는 잘 자라지 못해요.

Cacao trees in the tropical regions
It is very dificult to grow the cacao tree, which grows in the tropical regions nearby the equator needs high humidity, and a lot of rain pour around 1500mm per year.
Even in a tropical zone, places with lower than 16℃ won't be able to grow cocoa trees.

Manual Harvesting
A hanging cacao has a thick peel. When the fruit is ripe, famer peels it with long machete and harvest only flesh.
A skilled farmer can find a ripe fruit and harvest it in just few seconds.

Determines the taste of chocolate
Our cacao is fermented and dried right after when it is harvested.
Its white flesh becomes pulpy after fermenting and its almond-shape seed becomes brown bean during drying process, which determines the taste and aroma of cacao beans.

Like coffee and wine, chocolate is also divided into some different pallete of flavors by their varieties.
Although there could be individual differences, its taste and aroma generally expressed by earthy, fruity, floral, herbal, roasted, synthetic and buttery aroma.

Dark chocolate is the higher in cacao compared with other chocolates.
Therefore, it has rich catechin, such as polyphenols and flovonoids which we can expect great health benefit consuming it.

ABOUT GOOD CHOCOLATE
GOOD CHOICE & STORAGE
To choose good chocolate, you should check the cacao content of the chocolate. We recommend that the high content of cacao mass or cacao butter would be better.
If a chocolate is made with other alternative such as palm oil and chocolate flavors, you might not expect much of health effects from cacao bean.
Good chocolate?
The cacao beans are the antioxidants which are rich in flavonoids, and favorable to lower blood pressure, improve blood flow and heart health.
Therefore, the best chocolate is what has high content of cacao mass and cacao butter.
Bad chocolate
The choccies are made with palm oils instead of cacao butter generally have lots of synthetic flavors such as ethyl vanillin.
These chemical materials are not good for the body because they could cause headaches, abdominal pain and circulatory disorders.
How to store
Please keep in a cool place with no direct sunlight. Charlie's Fine Chocolate could be melted at lower temperature due to high content of cacao mass.

NO LECITHIN!
Lecithin is an extracted additive from soybeans or sunflower seeds, used as emulsifier to help a chocolate to be mixed with other proteins.
Charlie's Chocolate has only cacao and sugar, in order to provide the pure taste and aroma of cacao.
Therefore, it may be difficult if you want to combine it with other ingredient alone, so please take a note before your purchasement.
HOW TO STORE
The melting point of cacao butter is similar to our body temperature from 30 to 36℃.
If you want to keep the chocolate in shape, please keep it in a cool temperature and with no direct sunlight.
